Ingredients

  • 2 bone-in turkey breast halves 3-4 pounds each
  • 2 tablespoons duck fat melted
  • freshly cracked pepper to taste (omit for AIP)
  • coarse ground sea salt to taste

Instructions

  • Preheat oven to 425 degrees.
  • Place turkey breast on a rimmed baking sheet, skin side up, and rub all over with duck fat. Season with salt and pepper.
  • Place in oven and reduce heat to 375 degrees. Roast until internal temperature reaches 165 degrees, about 1 to 1-1/2 hours.
  • Cover with foil and rest for 15 minutes before slicing.
