Combine lime juice, olive oil, honey, chipotle flakes, salt and pepper. Pour over pork chops and toss to coat completely. Set aside to marinate for 1 hour.
Preheat grill and grill pineapple for salsa.
Grill pork chops 3-5 minutes per side, until internal temperature reaches145 degrees.
Rest for 3 minutes and serve topped with pineapple salsa.
