Easy marinated grilled vegetables tossed in a tangy balsamic and basil marinade, then grilled until tender with a nice char. A simple summer side that comes together fast and pairs with grilled chicken, steak, or pork.
1orange, yellow or red bell peppercut into thick strips
1medium red onioncut into wedges
3small carrotssliced in half lengthwise
1pintcherry tomatoes
Instructions
Wash and cut the vegetables.
In a small bowl, whisk together the marinade ingredients.
Pour half the marinade into a large bowl. Add the vegetables and toss to coat. Cover and marinate at room temperature for 30 minutes.
Heat the grill to medium-high.
Arrange the vegetables on a grilling tray or basket. Grill for about 12 minutes, until crisp-tender, flipping or tossing halfway through. If some pieces cook faster, take them off as they're done.
Transfer the vegetables to a platter and drizzle the remaining marinade over the top. Serve warm.
