And I found some beautiful just-picked peaches at the farm market this morning, along with some local raspberry honey. The beekeeper told me they moved a couple of the hives into the raspberry patch to make it.

It's perfect with fresh ripe peaches. I topped the peaches with crunchy macadamia nuts and drizzled them with the raspberry honey.

You could certainly dress this recipe up by grilling the peaches. But today I was looking for instant gratification, and the peaches were absolutely perfect the way they were. This is the time to use a specialty honey. The raspberry honey was perfect for this, giving it a hint of Peach Melba flavor.

    Here's what you'll need

    • Fresh peaches: Choose ripe and juicy peaches for a sweet and flavorful dish.
    • Honey: Use natural honey to add a touch of sweetness to the peaches.
    • Macadamia nuts: These crunchy nuts add a delicious texture and nutty flavor to the dish.

    How to make it

With these ingredients, you can create a delicious and easy dessert in minutes that highlights the flavors of summer.

Simply slice the peaches in half and remove the pit. Arrange the peaches on a plate, add the macadamia nuts and drizzle with honey.

    Variations

There are many ways to enjoy peaches with honey and macadamias. Here are a few of my favorites:

    • Grilled peaches with honey: Brush halved peaches with a mixture of honey and melted butter or ghee, then grill them cut-side down for a few minutes until they are caramelized and tender. Serve with chopped macadamias and a drizzle of extra honey.
    • Baked peaches with honey: Cut peaches in half and remove the pit. Place them cut-side up in a baking dish and brush with butter or ghee and honey. Bake at 350°F for 10-15 minutes, until the peaches are soft. Top with lightly toasted chopped macadamias.

These variations are simple and delicious ways to enjoy the sweet and nutty flavors of peaches with honey and macadamias.

What toppings work well with baked peaches?

Baked peaches are a delicious and easy dessert that can be dressed up with a variety of toppings. Some of my favorite options include a dollop of coconut whipped cream, a sprinkle of cinnamon, or a drizzle of honey. For a more decadent treat, try topping your baked peaches with a scoop of dairy-free vanilla ice cream or a crumble of grain-free granola.

What's a good method for toasting macadamias to enhance their flavor?

Toasting macadamias is a great way to bring out their rich, buttery flavor. To do this, preheat your oven to 350°F and spread the macadamias out on a baking sheet in a single layer. Bake for 5-10 minutes, or until the nuts are fragrant and lightly browned. Be sure to keep an eye on them, as they can burn quickly! Once they're toasted, let them cool for a few minutes before using them in your recipe.

What other nuts are best to pair with peaches in desserts?

When it comes to pairing nuts with peaches in desserts, there are a few options that work really well. In my experience, almonds, pistachios, and pecans all make great choices. Almonds have a subtle flavor that complements the sweetness of the peaches, while roasted pistachios offer a slightly salty contrast. Pecans have a buttery flavor that pairs well with the juicy sweetness of the peaches.

I made this last night for dessert. What I did different was grill the fresh peaches that I bought yesterday afternoon from my local farmer's market along with local honey. This was a huge hit, and I will be making it again and again.
