Using the crockpot is one of my favorite tips for when don’t have time to cook. Why? Because slow cookers make healthy and delicious meals super simple. With the right ingredients stocked in your paleo pantry, you can spend less than 10 minutes assembling your crockpot meal and return home in the evening to a fully cooked, ready-to-serve meal. What’s not to like about that!?
While I love using my slow cooker for quick butternut squash and sweet potatoes during meal prep, I also love cooking easy paleo chicken recipes in the crockpot. Everyone loves chicken and this budget-friendly family favorite is so versatile.

Can I Put Raw or Frozen Chicken in my Crockpot?
As you may already be aware, there’s a bit of a debate when it comes to safely cooking chicken in your crockpot. Here are a few things to consider before you cook your raw or frozen chicken.
While many crockpot chicken recipes state that it’s okay to place frozen chicken directly in your crockpot for cooking, the USDA recommends against this common practice. They instead recommend that you thaw any meat or poultry before cooking it in your slow cooker.
Other sources, like the senior vice president of communications at the National Chicken Council, suggest that it’s safe to cook chicken from frozen if you ensure that the internal temperature reaches 165° Fahrenheit (75° Celsius) at some point during the time that it’s cooking.
This internal temperature guideline is a good rule of thumb, no matter whether you cook from frozen or thaw your chicken overnight. You can easily check the internal temperature by inserting a thermometer into the thickest part of your meat. Using a meat thermometer is the best way to tell if your chicken is done no matter how you cook it. Don't skip this step!
