Curious about using coconut flour? Coconut flour is made from coconut meat that has been dried and then ground into powder.
Baking with coconut flour is unique in that it soaks up liquid, so you'll find that most recipes require eggs, oil and other liquid to help form the batter. It is often combined with almond flour, another low carb flour, to add texture to baked goods.

Thank you thank you thank you. So far I have tried the 3 minute English Muffins, the Coconut flour mini cheese Loaves and the Keto Cinnamon Rolls and they are excellent, very enjoyable and also very filling. These recipes are so basic and easy to make, and turn out well even when I sometimes make substitutes in the other ingredients if I don't have things on hand. I am not on a Keto or Paleo diet and do not have an intolerance to glutton but have found that starchy foods increase my blood sugar level. So, loving bread and muffins, finding these well researched and usable coconut flour recipes has solved that issue for me. Easy to make, they perform as is stated in the recipe and are an enjoyable food.
