The good news is it's super quick and easy to make your own paleo, keto, and Whole30 breakfast sausage. You can have sausage patties ready to cook or freeze in less than five minutes. And with zero carbs, this sausage recipe is perfect for a low carb keto breakfast.

Homemade breakfast sausage recipe
This simple recipe calls for just pork and a few spices. I think sage gives sausage that classic breakfast flavor. And I like to add a little smokiness and heat with smoked paprika. The great thing about making your own breakfast sausage is you can use any herbs and spices — rosemary, thyme, or even a poultry seasoning blend. Add whatever you like.
Pro tip: Make sure to mix your sausage seasoning blend together before adding it to the meat. This way the spices will be evenly distributed throughout your sausage patties. As a general rule of thumb, I like to use one teaspoon of salt per pound of meat---but you can always adjust this and use more or less salt to your taste.
This recipe can also be used with other types of meat. Make a chicken breakfast sausage with ground chicken. Or try a turkey version with ground turkey. It's so simple, once you try it you'll never need to buy breakfast sausage again!
And make extra sausage patties to put in the freezer. That way you'll always have some paleo breakfast sausage on hand to make a frittata, like this one with sausage and butternut squash or this one with sausage and mushrooms.

Paleo Breakfast Sausage
Ingredients
- 1 pound ground pork
- 1 teaspoon rubbed sage
- ½ teaspoon smoked sweet paprika
- ½ teaspoon smoked hot paprika
- ½ - 1 teaspoon sea salt (depending on how much salt you like)
- ¾ teaspoon fresh ground pepper
Instructions
- Combine spices in small bowl. Add to ground pork and mix until just combined. Form into 8 patties.
- Cook patties in a skillet over medium-low heat until browned and cooked through.

Hi! I will be making these today and can’t wait! If I plan to freeze some should I cook them first and then freeze them or form the patties and freeze them raw? Thanks!

Hi Jennifer, you can actually do it either way. But I prefer cooking them first so when I'm in a hurry I can just pull a couple out of the freezer and reheat them.

Hi there! I’ve made these before (a long time ago) and remember loving them! Planning to make again this week, but doubling so I have plenty to freeze 😉
Do you think they would cook well in the oven? If I’m doubling the recipe it would be much easier to bake all of them! What would you suggest?
And what do you think is the best method to reheat

Hi Coleen, I haven't tested baking the sausage patties but I don't see why it wouldn't work. I always like to reheat leftovers covered in a low oven.
