There's something about a big, colorful chopped chicken salad that just hits the spot. This one brings together crisp lettuce, juicy rotisserie chicken, smoky bacon, creamy avocado, and plenty of fresh veggies for layers of flavor and texture in every bite.

The best part? It comes together in just 15 minutes using pre-cooked chicken and bacon, so it's perfect for busy days when you want something fresh but fast. Whisk a quick honey mustard dressing, toss everything together, and it's on the table in no time.

    Ingredients You'll Need

Here's what you'll need to make this easy chopped chicken salad.

    For the Salad

    • Rotisserie chicken - Shredded store-bought chicken for convenience. Or make quick air fryer chicken breasts.
    • Iceberg lettuce - Crisp and sturdy so it holds up in the salad. Romaine lettuce is a great swap.
    • Cucumber - Adds cool crunch. English cucumber saves you from peeling for quicker prep.
    • Cherry tomatoes - Sweet and juicy, cut in half for easy eating.
    • Red onion - Thinly sliced for a bit of sharpness.
    • Avocado - Use a firm-ripe avocado so it dices cleanly and doesn't get mushy when you toss it.
    • Bacon - Cooked and chopped for salty, smoky crunch. (Make the bacon in the oven for easy meal prep.)

    For the Honey Mustard Dressing

    • Dijon mustard - Smooth and tangy for that classic taste. Stone-ground or spicy brown mustard also works.
    • Honey - Brings sweetness to balance the tang.
    • Olive oil - Helps emulsify the dressing and adds richness.
    • Lemon juice - Adds freshness and acidity.
    • Salt and pepper - Sea salt and fresh ground black pepper for seasoning.

How To Make Chicken Chop Salad

Making this chicken chopped salad is quick and easy.

    1. In a large bowl, combine the lettuce, cherry tomatoes, cucumber, red onion, avocado, bacon, and shredded chicken.
    2. In a small bowl or jar, whisk together Dijon mustard, honey, olive oil, lemon juice, salt, and pepper until smooth.
    3. Drizzle the honey mustard dressing over the salad and toss gently to combine. Serve immediately.

    Variations

Mix it up with these easy twists-use what you've got in the fridge and add your favorite flavors.

    • Add crunch - Toss in toasted almonds, pecans, or pumpkin seeds.
    • Veggie extras - Green onion, red bell pepper, or carrots.
    • Make it spicy - A pinch of red pepper flakes or a little minced jalapeño.
    • Swap the dressing - Try a quick Italian dressing or easy homemade ranch dressing.
    • Make ahead - Keep the dressing separate and dice the avocado just before serving.

No matter how you make it, this easy chopped salad will be a go-to for busy weeknights.
