    This grilled pineapple salsa is simple and fresh with the smoky sweetness of the pineapple, fresh herbs, lime and jalapeno. It's perfect for grilled chicken or fish tacos!

    We had a few wedges of grilled pineapple left over from dinner yesterday. And some beautiful fresh cilantro from the market inspired this grilled pineapple salsa.

    It's simple and fresh - I love the smoky sweetness of the pineapple with the fresh herbs, lime juice, and a little kick of heat from the jalapeno.

    Grilling pineapple is simple. Just throw it on a nice hot grill.

    You can brush the pineapple with a little oil if you like, but we don't put anything on it. The natural sugars caramelize and it releases from the grill when it's ready.

    I like a lot of cilantro in this salsa. I think the flavor works well with the pineapple. But if you're not a big cilantro fan, you can always use less, or substitute another herb.

    I'm thinking chicken lettuce wraps for dinner tonight with guacamole and this grilled pineapple salsa. But of course, this salsa would also be wonderful over grilled fish.

    Ingredients

    • 1-½ cups fresh pineapple spears or slices
    • 1 tablespoon avocado oil for grilling
    • ¼ cup onion finely diced
    • 1 jalapeno finely diced
    • juice of 1 lime
    • ¼ cup fresh cilantro chopped
    • sea salt to taste

    Instructions

    • Brush the pineapple spears or slices with avocado oil. Grill until lightly charred with grill marks on a grill pan or BBQ. Cool and dice and place in a medium bowl.
    • Add diced onion, diced jalapeno, lime juice, cilantro, and salt to the bowl and toss to combine. Taste and adjust seasonings.

    Makes about 1-¾ cups of salsa.

      great idea for pineapple, I never seem to use enough before it dries out, this is s a great way to use up the rest of my pineapple! Love jalapeno too, spicy is preferred, so thank you for this recipe!

      I seen a pineapple salsa that not only grills the pineapple, but the red bell peppers, red onions and jalapeno as well.
