This is one of those last minute recipes that came about because of what I had in the kitchen—and it turned out to be one of my favorites. I had a couple of fresh peaches that needed to be used up, and a can of coconut milk in the fridge, and thought they would be great in a peaches and “cream” smoothie. I absolutely love the combination of fresh peaches and coconut milk with a hint of lemon.

Coconut milk is one of the best dairy substitutes and it’s perfect for using in smoothies. It’s rich and creamy and adds a subtle tropical flavor to whatever you mix it with.

The most important thing to look for when choosing your coconut milk is a clean ingredient list. Coconut milk should only have two ingredients: coconut and water. (I use either this one or this one.) Steer clear of brands that include gums and other processed food chemicals.

This usually means choosing shelf stable coconut milk in a can or box. Most of the refrigerated brands have a long ingredient list full of additives that are not paleo-friendly. Be sure to read the ingredients on the label and get one with nothing added. And don’t forget to look for BPA-free packaging as well.

Peach smoothie ingredients

Sweet ripe peaches make all the difference in this smoothie. Peaches are one of those fruits that tend to lose a little flavor when they’re frozen. Fresh peaches will give you more flavor—especially if they’re home-grown (they’re in season from May to September, depending on where you live). And the beauty of making your smoothie at home is that you can add extra peaches if you like even more peach flavor.

Using chilled full fat coconut milk and ice gives this smoothie the perfect milkshake-like consistency. And while this recipe will work in a regular blender, blending it in the Vitamix makes it velvety smooth. I think fresh ripe peaches and coconut milk are sweet enough on their own, but you can always add a little of your favorite sweetener if you like.

With just a few ingredients this paleo peach coconut smoothie is light, healthy and refreshing. Try it with paleo breakfast sausage on a biscuit for an egg-free breakfast.

Ingredients

  • 1 cup coconut milk chilled
  • 1 cup ice
  • 2 fresh peaches peeled and cut into chunks
  • lemon zest to taste

Instructions

  • Add coconut milk, ice and peaches to Vitamix or blender. Using a microplane, add a few gratings of fresh lemon zest, to taste.
  • Blend on high speed until smooth.

    can substitute the peach for mango? and coconut milk for coconut edible oil?

      Here’s a recipe for a mango coconut smoothie. Coconut oil cannot be substituted for coconut milk – they are very different.
