For those that aren't familiar with this popular gluten-free ingredient, almond flour and almond meal are common in paleo and low carb baked goods recipes that are traditionally made with wheat flour. Both almond flour and almond meal can easily be found either online or in the baking or gluten-free sections in most grocery stores.
The primary difference between almond flour and almond meal is the way it's made. Almond flour is typically made from blanched almonds that have had the skins removed and it is ground quite finely. This makes it perfect for baked goods needing a light, airy texture.
Almond meal is, of course, also made with almonds, but is typically more coarse and the almonds are often ground with the skin on. This is a good choice whenever you're making a recipe that's a little more forgiving with the texture, such as 'breaded' meat or quick breads.
