I love avocados. They are one of the foods I always have in my kitchen. Guacamole on a burger or sliced avocado in a salad adds healthy fat, fiber and vitamins. This is one of my favorite quick snacks — just avocado, bacon and balsamic vinegar with a little bit of sea salt. It’s smoky, salty, sweet and creamy. Instant satisfaction when you need to eat something now.
There are a couple of things you’ll need to have on hand to make this an instant snack. The first is cooked bacon. Cook extra when you make it for something else and put a couple of slices in the fridge for a snack later. The second is good, perfectly ripe avocados. Lastly, you’ll need a good aged balsamic vinegar with a nice body and a little bit of sweetness. Look for one with no added color or other ingredients. I like to use one that’s been aged at least 12 years for a nice complex flavor. Just make sure you use one that you like the flavor of on its own.
That’s it. With a few simple ingredients on hand, you’ll always have a quick avocado, bacon and balsamic snack—or easy egg-free breakfast—available.
- 1 avocado
- 2 slices cooked bacon, chopped
- aged balsamic vinegar, to taste
- sea salt, to taste
- Halve avocado and remove pit.
- Sprinkle with bacon, balsamic vinegar, and sea salt to taste.
- Serve with a spoon.
