    Avocado, Bacon and Balsamic Snack

    A favorite quick snack, avocado, bacon and balsamic is smoky, salty, sweet and creamy. Instant satisfaction when you need something fast and easy that also happens to be paleo, keto, and Whole30 friendly!

    I love avocados. They are one of the foods I always have in my kitchen. Guacamole on a burger or sliced avocado in a salad adds flavor and creaminess. This is one of my favorite quick snacks - simply avocado, bacon and balsamic vinegar with a little bit of sea salt. It's smoky, salty, sweet and creamy. Instant satisfaction when you need to eat something now.

    There are a couple of things you'll need to have on hand to make this an instant snack. The first is cooked bacon. Cook extra when you make it for something else and put a couple of slices in the fridge for a snack later. My favorite way to cook bacon is in the oven.

    The second is perfectly ripe avocados. Lastly, you'll need a good aged balsamic vinegar with a nice body and a little bit of sweetness. Look for one with no added sugar, color, or other ingredients. I like to use one that's been aged at least 12 years for a more complex flavor. Just make sure you use one that you like the flavor of on its own as it's one of the star ingredients.

    Ingredients

    • 1 avocado
    • 2 slices cooked bacon chopped
    • 1 teaspoon aged balsamic vinegar to taste
    • sea salt to taste

    Instructions

    • Halve the avocado and remove pit.
    • Sprinkle with bacon, balsamic vinegar, and sea salt to taste.
    • Serve with a spoon.

      I JUST ate one of these not 10 minutes ago and it is SOOOOO good!! And super easy. This would make a great breakfast too, since I've been struggling to find good Paleo friendly breakfasts (that don't use any eggs, nuts, or milk as I am allergic to all three 🙂 )
