Here's What You'll Need
These keto-friendly low carb English muffins require only a few ingredients you probably already have at home. Prep time is minimal, and you'll end up with a meal option that is dairy-free, gluten-free, keto, low carb, paleo-friendly, and vegetarian.
- Avocado Oil − this oil's neutral flavor that makes is perfect for this mug bread. Avocado oil has a very mild taste and is a good substitute for vegetable oil in most baking recipes.
- Large Egg − the egg is a kind of glue in the bread recipe and helps with the shape and form of your low carb English muffin. It also helps create the nooks and crannies.
- Sea Salt − the sea salt adds more flavor and texture to your English muffins.
- Baking Powder − the baking powder is a leavening agent and helps your English muffin create its signature bubbly texture. The gas bubbles become trapped as the English muffins cook, forming the air spaces you typically see.
- Coconut Flour − this flour is high in fiber, gluten, and grain-free and is ideal for a keto diet. You can also use blanched almond flour instead of coconut flour. (Note, this is not a 1:1 substitution, see the recipe card for amounts.)
How To Make Low Carb English Muffins
You can make this quick bread with just a few ingredients and a very little bit of time. You just mix the ingredients right in the ramekin that you microwave it in making it a one-bowl recipe.
There are both a coconut flour and an almond flour versions of this microwave keto bread so you can choose the option that works best for your diet.
Both the coconut flour and almond flour versions take just a minute to a minute and a half in the microwave. Either way you make it, you'll love the convenience of being able to whip up a keto bread in minutes.
Steps
1. Start by greasing your ramekin with the oil of your choice.
2. Whisk the avocado oil and large egg with a fork, and then add the remaining ingredients until everything is well combined into a thick batter.
3. Place your ramekin in the microwave for 60 to 90 seconds. The time may vary depending on your microwave. Check after 60 seconds and add thirty more seconds if the egg doesn't look cooked.
4. Let it cool and remove the low carb English muffin from the ramekin. Take a knife and run it around the edge of the container, flip it over, and let it slide out onto your plate.
5. You can then slice your English muffin in half lengthwise, so it fits in your toaster or toaster oven. The microwaved English muffin toasts up beautifully.
How To Serve A Keto English Muffin
Once you have your low carb English muffins toasted to perfection, they're ready to serve for breakfast, brunch, lunch, a snack, or even as an easy dinner side.
- Serve your keto muffin with grass-fed butter or ghee (I love this one with Himalyan pink salt!). Who doesn't like warm and toasty English muffins slathered with some melty butter and a sprinkle of cinnamon?
- Make a breakfast sandwich. Top your toasted low carb English muffin with an egg and a slice of deli ham, sausage or bacon for a delicious and filling keto breakfast. Serve alongside avocados or raspberries.
- Serve with a keto jam or jelly. Or spread it with almond butter and sugar-free jam or your favorite sandwich filling for a snack.
- Mash and avocado with a little lemon juice and salt, spread on your toasted bread and top with everything bagel spices for an avocado toast. The possibilities are endless.
Does a low carb English muffin have the same texture as a regular English muffin?
Yes. A low carb English muffin has the same texture as a regular English muffin. English muffins are often characterized by their chewy texture and light air pockets.
Can you freeze microwave English muffins?
Yes. Your low carb microwave English muffins can be frozen for a couple of months. Freezing them helps them to retain their quality. However, you want to be sure they are fresh before storing them in the freezer, so they are of the best quality once defrosted.
Can you make these low carb English muffins without a microwave?
If you do not want to make your low-carb English muffins in a microwave, you can also bake them in a small cast iron, stainless steel, or nonstick pan in the oven at 350 degrees for 10 - 15 minutes, or until a toothpick inserted in the center comes out clean. Make sure to butter the pan to keep the muffins from sticking.

3 Minute English Muffin For One
Ingredients
All Coconut Flour Option
- 1 Tbsp. avocado oil + more for greasing
- 1 large egg
- ⅛ tsp. sea salt
- ½ tsp. baking powder
- 1 Tbsp. coconut flour
OR For Almond/Coconut Flour Option
- 3 Tbsp. blanched almond flour
- ¼ tsp. coconut flour
Instructions
- Lightly grease a ramekin or other container with a flat bottom that is about 3–4 inches in diameter with oil of choice.
- Whisk together the avocado oil and egg with a fork in the ramekin.
- Then, whisk in the remaining ingredients until well combined.
- Microwave on high for 60-90 seconds (Mine always needs 90).
- Run a knife along the edges and flip over a plate to release.
- Slice in half lengthwise and toast in a toaster.

Hi, this recipe looks easy and delicious. I don’t have a microwave. Do you know what the equivalent baking time and temperature would be in an oven?

You can bake this in the oven at 400 degrees for 15 minutes, or until center is set and cooked through. It tends to stick a bit more when made in the oven so allow it to cool before carefully removing from the ramekin 🙂

I was wondering if you could use normal olive oil instead of Avocado oil?

It should work, but because olive oil has a stronger flavor than avocado oil it may change the taste of the bread.

Thanks for the recipe. I am diabetic and avoiding carbs so this is a great treat. I am experimenting on how to make it a bit more healthy so I replaced the egg with 3 tablespoons of Just Egg. Still worked but must less lift than using egg, though acceptable for me. Next step is to see if I can cut down the oil a bit by using 1/2 tablespoon of oil and 1/2 tablespoon of applesauce.
