I love soup. There's nothing better than a great, big pot of soup simmering away on a cold day. It makes the house smell wonderful. It warms you up and warms your soul.
But some days I don't have time for a long-cooking soup. This is one of my favorite quick and easy soup recipes—creamy paleo broccoli soup in just 15 minutes using 5 pantry ingredients. The recipe is deceptively simple, but it makes a rich and creamy broccoli soup with a hint of garlic.
Easy Broccoli Soup Recipe
The secret to making this soup so quick and easy is frozen broccoli. Yes, that's right, just pull it out of the freezer and put it in a pan with some stock and garlic. Then puree it in the blender. If you have one, a high power blender, like a Vitamix, makes this easy pureed broccoli soup velvety smooth. If not, you can use a regular blender, immersion blender, or even a food processor for a more rustic texture.
The ghee adds a buttery flavor reminiscent of traditional cream soups. But if you are looking for a completely dairy-free version of this paleo broccoli soup, you can easily swap out the ghee. I included the ghee mostly for flavor, so be sure to substitute with a fat or oil that will enhance the flavor of the broccoli. Olive oil, coconut oil, or bacon fat would all be good. And a drizzle of flavored oil also makes a great garnish.
For a dairy-free cream of broccoli soup option, you can substitute coconut milk for part of the stock. Replacing about half a cup of the chicken or vegetable broth with coconut milk will make it extra creamy.

Easy Paleo Broccoli Soup
Ingredients
- 1 16-ounce bag plain frozen broccoli
- 2 cloves garlic peeled
- 3 cups chicken stock or vegetable stock
- 1 tablespoon ghee or olive oil
- sea salt to taste
- fresh ground pepper to taste
- organic extra virgin olive oil for garnish, optional
Instructions
- Bring broccoli, garlic, and stock to a boil over medium-high heat. Cover, reduce heat and simmer 10 minutes.
- Carefully transfer to Vitamix and puree until smooth (or puree with an immersion blender).
- Add ghee or olive oil, season with salt and pepper, and blend to combine.

I use to LOVE broccoli cheese soup in my pre-paleo days. How does this compare with no cheese in it? I can't do any dairy and not even ghee. Thanks!

Hi Betsy, the flavor is obviously a bit different, but the texture is still creamy from pureeing in the blender.

If you add a little nutritional yeast on top it may temporarily sooth the 'cheese monster' most of us fight when starting paleo/a whole30

I use the coconut milk 1/2 cup but have flecks of coconut fat all thru the soup. Had thought it would melt. I this just how it is??

I have made this soup many times and have even added curry powder to it which has a nice kick to it. I also use 1/2 cup or so of pure coconut milk. Such a delicious soup and so many great options. I have used parmesan Crisp crackers and nutritional yeast when avoiding dairy completely. Thanks so much for a great recipe.
