What do you do when you have an abundance of tomatoes? Roast them! This simple side dish is so quick and easy. And roasting the tomatoes brings out their natural sweetness.
You can use cherry tomatoes or grape tomatoes for this recipe. I had a huge basket of grape tomatoes that needed to be used up today, so they all went in the oven. You really don't even need to measure anything. Just drizzle with olive oil, and sprinkle with salt and pepper. Roast the tomatoes until they just start to caramelize and burst open. They cook themselves while you work on the rest of dinner.
Simple Roasted Tomatoes
- Preheat oven to 400 degrees.
- Toss tomatoes with olive oil, salt, and pepper on rimmed baking sheet.
- Roast until tomatoes start to burst, about 15 - 20 minutes.
- Garnish with fresh herbs.
