    Simple Roasted Cherry Tomatoes

    Ready in less than 30 minutes, this simple roasted cherry tomatoes recipe will become a summertime favorite. It's an easy side dish that's the perfect way to bring out the natural sweetness of tomatoes.

    What do you do when you have an abundance of tomatoes? Roast them! It's a great way to use your overflow of homegrown cherry tomatoes or when you spy that irresistible basket at the farmer's market.

    You can use cherry tomatoes or grape tomatoes for this recipe. I had a huge basket of tomatoes that needed to be used up, so they all went in the oven.

    You really don't even need to measure anything. Just drizzle with olive oil, and sprinkle with salt and pepper. Roast the tomatoes until they just start to caramelize and burst open. They cook themselves while you work on the rest of dinner.

    Ingredients You'll Need

    • Tomatoes: Use cherry tomatoes or grape tomatoes for this recipe. Cherry tomatoes will be a little sweeter.
    • Olive Oil: The oil keeps the tomatoes from drying out as they roast and it helps elevate the tomatoes' natural flavor.
    • Sea salt and pepper: Just a dash of each will boost the natural flavors.
    • Fresh basil or parsley: Add either savory herb as a garnish once the tomatoes have finished roasting.

    How To Roast Cherry Tomatoes

    1. Preheat your oven to 400° F. Line a rimmed baking sheet with parchment paper.
    2. For cherry tomatoes, cut each in half. For smaller grape tomatoes, you can leave them whole.
    3. Toss tomatoes with olive oil, salt and pepper and place them on the pan.
    4. Roast until the tomatoes start to burst and release their juices, about 15 - 20 minutes.
    5. Remove from the oven and garnish with fresh herbs before serving.

    Variations To The Recipe

    This recipe is amazing as written, but if you're looking for a little more heat or spice, try one or more of these variations.

    • Add minced garlic
    • Add pitted black or green olives
    • Add crushed red pepper
    • Add a drizzle of balsamic vinegar
    • Add dried herbs while roasting. Try rosemary, oregano, thyme, or herbs de Provence.

    How To Serve Roasted Tomatoes

    Delightful on their own, roasted cherry tomatoes are great as a side, a sauce, or a topping. Here are a few other ideas on how to serve them for a simple stress-free meal.

    • Serve them as an appetizer with keto bread for a low carb bruschetta.
    • Serve on top of a salad by adding them to a bed of your favorite greens. Dress it all with a drizzle of balsamic vinegar and extra virgin olive oil.
    • Turn them into part of an entree by serving them over spiralized zucchini for a paleo-inspired "pasta" meal.
    • Serve them as an accompaniment to chicken, like my quick air fryer chicken recipe, my Italian grilled chicken breasts, or with roasted chicken.
    • Serve them as an accompaniment with seafood, such as my roasted shrimp and zucchini pasta meal.
    • Serve them as an accompaniment with beef and up-level a comfort food meatloaf meal.
    • Fill an avocado with them.
    • Top mashed cauliflower with them.

    Storing Leftovers

    Save any leftovers in an airtight container for 3 to 4 days in the refrigerator.

    Leftovers are excellent served cold, especially if you are using them in a salad.

    If you need to reheat leftovers, use your microwave on a low setting and cook in 15-second increments, covered until the desired temperature is reached.
