    This paleo oatmeal mix the perfect breakfast to make ahead during your meal prep session. It takes just minutes to stir together makes paleo instant oatmeal even faster.

    How To Make Paleo Oatmeal Mix

    I was making my no-oat paleo "instant oatmeal" for breakfast one day, and I realized it would save time to make a big batch of oatmeal mix for the week.

    Since then I always have a batch made up — especially in the colder months. I love the convenience of having it ready to go in the mornings. Here's how to make your own paleo instant oatmeal mix.

    Paleo instant oatmeal mix

    This recipe is super simple. All you have to do is mix together the dry ingredients for the paleo oatmeal recipe. Since this is a grain-free n'oatmeal, the dry ingredients do not include oats.

    Here's what you'll need to meal prep your instant oatmeal mix:

    • almond flour - I use this one
    • unsweetened finely shredded coconut - be sure to use a fine shred like this one as the coconut is what gives this porridge it oatmeal-like texture
    • ground cinnamon
    • sea salt
    Paleo Oatmeal Mix

    To make your instant oatmeal, just mash half of a banana in the bottom of a cereal bowl, stir in a scoop of the oatmeal mix and some nut milk, and pop it in the microwave.

    When it's done, top your paleo almost oatmeal with all your favorite oatmeal toppings. I like fresh blueberries, chopped walnuts, and real maple syrup.

    Make this oatmeal mix over the weekend and you'll have a quick and easy hot breakfast to make at home. Or an easy portable gluten-free, dairy-free almost oatmeal breakfast to make in the microwave at work.

    Ingredients

    • 1 cup almond flour packed (120 grams)
    • 1 cup finely shredded unsweetened coconut
    • 2 teaspoons cinnamon
    • ¼ teaspoon sea salt

    Instructions

    • Whisk all ingredients together in a large bowl.
    • Store in a glass jar in the refrigerator.

    Notes

    TO MAKE 1 SERVING OF PALEO "INSTANT OATMEAL"
    ½ banana
    ¼ cup paleo oatmeal mix
    ⅓ to ½ cup cashew milk
    Mash the banana in the bottom of the bowl. Add remaining ingredients and stir to combine. Microwave 1 - 2 minutes, until hot and starting to bubble. Stir and let stand a couple of minutes. It will thicken slightly as it cools. Serve with your favorite toppings.

      So excited to try this on a cold morning. I wonder if yummy could substitute diced apples for the bananas sometimes?

        The bananas add to the oatmeal texture, so I wouldn't leave them out. But diced apples and extra cinnamon would be a yummy topping!

        I haven't tested it, but I'm guessing you would need to use less coconut flour and add more liquid. If you try it, let me know how it turns out!

      I am wondering how much carbs are in a serving please. I've not tried it as get as I am reaching low carb recipes. I am still weighing up keto verses paleo and whole foods. Any insights I would be greatly appreciated.

      Is the shredded coconut same as coconut flour ?

        Shredded coconut is not the same as coconut flour. The finely shredded coconut in this recipe is what gives it the texture of oatmeal. I use this one.

      This was easy and quick and good. Make sure you use finely shreadded coconut per the recipe. I only had the larger flakes, which were more dry. I put them in a food processor and chopped them up, but even so they didn't cook up and were still solid after cooking. Also, my banana wasn't fully ripe and I found it to be "thread-y", and not in a palatable way, so I think the ripe'r the better. I only had almond milk, a bit redudant to the almond flour, but it was fine. I'm going to try this on the stovetop ( as mixed up a large batch and I want that coconut more soft ). I only added chia seeds afterward, and they blended right in. It was very quick and filling. I'll experiment next with toppings - blueberries or peaches, or finely chopped nuts/seeds. Thank you!
