    You only need a few simple ingredients for this salad.

    • English cucumber - Crisp and mild, with tender skin so you can skip peeling.
    • Avocado - Adds a creamy texture that contrasts the crunchy vegetables.
    • Cherry or grape tomatoes - Juicy and sweet, the perfect bite size.
    • Red onion - Thinly sliced, they add flavor and a little crunch.
    • Fresh lemon juice - Adds brightness and acidity. Can also use lime juice.

    How to Make Cucumber Avocado Salad

    This salad is quick and easy to put together.

    Prep the vegetables - Wash all the produce. Quarter and dice the cucumber, halve the cherry tomatoes, and thinly slice the red onion. Peel and dice the avocado, and add it a large bowl with the vegetables.

    Dress the salad - Juice the lemon and drizzle it over the salad with olive oil. Add salt and pepper, then gently mix until everything is combined.
